To the question, “can I bake bread in my Solavore Sport?”, the judges at this year’s Montana State Fair have two words: Grand. Champion. Thanks to Amy Grisak for submitting this amazing ancient grain bread recipe and for letting us share it here.
Ingredients
Makes 2 loaves
4 and 2/3 cups all-purpose white flour (unbleached organic if available)
2 cups warm water
1 and 1/3 T. yeast
2/3 cup honey
1 and 2/3 cups Kamut Khorasan wheat
2/3 T. salt
2 T. butter, melted
Directions
Mix the water, honey, and yeast together. Allow it to foam for a minute.
Add 3 cups of flour and stir well. Allow to sit for 45 minutes.
Add melted butter, salt, Kamut Khorasan wheat, and remainder of the white flour. Mix well either by hand or a mixer. Knead for 6-8 minutes.
Cover and allow to rise for a couple of hours (until doubled).
Punch down and divide into two loaves. Place them in buttered loaf pans.
Cover and allow the loaves to rise approximately an hour. Preheat the solar oven and place the loaves inside. Bake for an hour or more, until they are golden brown.
