Southwestern Quinoa with Sweet Potato and Black Beans

This one pot dish is easy and feeds a crowd!


1 can of black beans, drained (15 oz)
1 large sweet potato cut in 1/2 to 3/4 inch dice
1 cup uncooked, rinsed quinoa
1 cup corn, fresh or frozen
4 cloves garlic, minced
1 cup water or broth
1 cup salsa 
1 1/2 T taco seasoning
optional chopped fresh jalapeno
salt and pepper to taste

green onions and cilantro for garnish


Place all ingredients in your Sport graniteware pot and give it a stir. Place the covered pot in the pre-heated Solavore Sport and let cook for 2.5 to 3 hours. Once the sweet potatoes are cooked through and the liquid has been been absorbed, it is ready to eat. Garnish with the cilantro and green onions and use salt and pepper if desired.
