This delicious Italian side dish features bell peppers slowly cooked with garlic, onion, tomato and oregano. Not only is it a great pasta sauce, it is also wonderful with roasted meats or spooned onto slices of country bread.


  • 1/4 cup of olive oil
  • 4 red, yellow or orange bell peppers, cut into squares approximately 3/4 inch
  • 1 onions, finely diced
  • 1 tbsp minced garlic
  • 1 cup canned crushed tomatoes
  • 1 tsp dried oregano or several sprigs of fresh oregano
  • Salt, pepper to taste


Place all ingredients in your Graniteware pot and stir to combine. Place the pot in your preheated Solavore Sport and let it cook slowly (no reflectors needed) for 2-3 hours. When your peppers and onions are very tender you'll know this dish is done. This is a recipe that benefits from cooking even longer, so don't be afraid to set it and forget it until dinnertime.
