Green Chile Cornbread

This cornbread recipe mixes up quickly and is the perfect size for one Solavore Sport pot. Use your other pot for Solavore Smokin' Chili  and you've got a satisfying meal everyone will love.


1-1/2 c cornmeal
1/2 c flour
4 tsp baking powder
1/2 tsp salt
1/4 c sugar
1 tsp cumin
1 egg
1/2 c yogurt
1/2 c milk
1/4 c water
1 4-oz can chopped green chilis (or jalapenos or chipotle peppers)
1 4-oz can corn
1 c shredded cheese (cheddar, queso blanco or monterrey jack)
6 Tbsp melted butter


Grease Graniteware pan. Mix dry ingredients together. In separate bowl, combine egg, yogurt, milk and water. Add to dry ingredients. Stir in chilis, corn and cheese. Stir in melted butter. Spoon into prepared pan. Batter will be thick, may thin with water or milk if desired. Sprinkle paprika on top. Cover pan and bake in solar oven 2 hours or until done.
